Double Chocolate Cherry Cream Muffins!


This delicious treat will definitely satisfy you when you get the delicious taste of chocolate and cherries all in one bite.

"This version has dried sweetened tart cherries and a chocolate chip cheesecake filling added to it."

Original Recipe Yield 18 muffins."

"Ingredients:

Filling:
8 oz package cream cheese, softened
1 egg
1/3 cup sugar
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
Batter:
1 cup whole wheat flour
3/4 cup ground flaxseed
1/2 cup oat bran
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 cup cocoa powder
1 cup buttermilk
3/4 cup pumpkin puree
1 cup brown sugar
1 egg
1 cup dried sweetened tart cherries."

"Directions:

Preheat oven to 350 degrees F (200 degrees C). Line 18 muffin cup pan with paper liners.
Beat softened cream cheese. Add egg, vanilla extract and sugar and beat to combine, scraping bowl as neccessary. Stir in chocolate chips and set aside.
Combine flour, flax meal, oat bran, baking soda, baking powder and cocoa powder in a large bowl.
In another bowl, beat the buttermilk, pumpkin puree, brown sugar and egg until smooth. Stir in cherries. Gently stir the wet ingredients into the dry, mixing just until combined. Place about 1/4 cup of batter in each muffin cup. Top each with a tablespoon of filling. Divide the remaining batter between the cups (about 1 tablespoon each). Bake 25 to 30 minutes or until done. Let cool 5 minutes then remove to cool completely on wire rack."
